Carrot Walnut Cake
Ingredients
455 gm grated carrot
390 gm fine sugar
4 eggs
3/4 cup corn oil
75gm chopped walnut
255 gm flour
1/4 teaspoon baking powder
3/4 teaspoon bicarbonate soda
1/2 teaspoon salt1 tespoon cinnamon powder

Topping: Cream Cheese Icing
220 gm cream cheese
130 gm icing sugar
60gm butter
1 tablespoon orange juice
1 teaspoon grated orange rind
3 teaspoon orange essence
Method1.Beat eggs and sugar till smooth
2.Sift flour together with cinnamon powder and salt
3.Pour in the corn oil into the egg and sugar mixture
4. Put in flour a little at a time mixing slowly
5. Put in the carrot and mix
6. Bake in hot oven till doneIcing
1. Beat cream cheese and butter till smooth
2. Put in the icing sugar and orange juice
3. Put in the orange rind and orange essence
When the cake is cool, smooth on the cream topping.

How To Make Carrot Cake

You will need
Units: Metric US Imperial UK Imperial
180 g self raising flour
350 g caster sugar
1 tsp baking powder
1 tsp ground cinnamon
3 eggs
220 g grated raw carrot
¼ tsp salt
200 ml sunflower oil
for the frosting:
180 g cream cheese
180 g melted butter
150 g icing sugar
½ tsp vanilla essence
Serves: 8
Preparation Time: 15 minutes
Cooking Time: 1 hour
Oven Temperature: 180° c - 360° f

Step 1: Preheat the oven
Heat your oven to 180C/350F/gas 4. Grease and line a 25cm round cake tin.
Step 2: Combine the dry ingredients
Sieve together 175g self-raising flour, 1 teaspoon baking powder, 1 teaspoon cinnamon and 1/4 teaspoon salt.
Step 3: Mixture
Put 300ml oil in a large bowl and beat with 350g the sugar. Beat in 3 eggs one at a time, then fold in the dry ingredients and stir in 225g grated carrot.
Step 4: Bake
Place the mixture in the tin, level off the top, and bake for 45 mins. Then turn the oven down to 170C/325F/gas 3 for a further 20 mins. When it's done, take the cake out of the oven and cool in the tin for 5 mins. Then remove from the tin to cool on a wire rack.
Step 5: Icing
While the cake is cooling, beat together the 175g cream cheese and 175g butter and add 1/2 teaspoon vanilla essence. Gradually add 225g sieved icing sugar until the mixture is stiff but spreadable.
Step 6: Finish
When the cake is cool, split it in half horizontally and use the icing to sandwich it back together and cover the top

Turkey Drumsticks


Finaly, I get to bake a drumsticks turkey for christmas celebration, it took my around 3 hours for baking time.
The following is the recipe,
Ingredients:
• 6 Turkey drumsticks
• 3 tsp Ground cumin
• 2 tbsp Chili powder
• 1 tsp Pepper
• 1 tbsp Lime zest ( use fresh lime)
• 2 tsp Salt
• 1 Cup(238g) bottled barbecue sauce

How to make Turkey Drumsticks:
•In a small bowl, mix together chili powder, cumin, salt and pepper.
•Sprinkle mixture over the drumsticks and rub it into the drumsticks.
•Put the turkey drumsticks in a big roasting pan.
•Cover and roast at 350 degrees F (200 celcious)  for about 60 minutes to 1 1/2 hours or till done.
•Combine together the barbecue sauce and lime.
•Brush turkey drumsticks with this mixture and continue baking for about 15 to 20 minutes, uncovered or till heated through.
- Tips:Use aluminium fold to cover the top of the dish from turkey turning brown.

Chiffon Cake


Ingredients A:
5 eggs yolks
150g self-raising flour
75g castor sugar
5tbsp corn oil
5tbsp water

Ingredient B:
5 egg whites
1/2tsp cream of tartar
75g castor sugar

Method
1. Get ready all the ingredients A
2. Get ready all the ingredients B
3. Put all ingredients A into a mixing bowl
4. Use a whisk and stir in one direction until smooth and well combined
5. Put egg whites and cream of tartar into a mixing bowl, use high speed to whisk until frothy
6. Add in sugar slowly
7.Continue to whisk until stiff but not dry ( egg whites can form into small peak)
8. Pour in mixture A
9. Use a whisk and stir in one direction until smooth and well combined
10. Pour into a 22cm shiffon cake tin (do not grease or line)
11. Bake in pre-heated oven at 150 C for about 30 minutes until lightly brown. Change into 180C and continue to bake until 100% cooked and golden brown.
12. Remove from oven, invert and leave to cool completely before removing cake from the tin.
